COCA COLA CAKE

* Special note: Please use the original Coca-Cola and not diet. Mix all ingredients by hand. Do not use electric mixer!

2 cups self-rising flour
½ cup butter or margarine
½ cup Wesson oil
3 tablespoons powdered cocoa
1 cup Coca-Cola drink (no substitutes, no diet drinks)

½ cup buttermilk
1 teaspoon soda   
2 eggs, beaten
1 teaspoon vanilla extract
1½ cups miniature marshmallows
"Cola Topping"

Preheat oven to 350°. Grease and flour 13x9x2" baking pan; set aside.

Sift sugar and flour together in large mixing bowl. Combine butter, Wesson oil, cocoa and Coca-Cola drink and heat over medium heat till butter is melted; pour over flour mixture and stir well. Add buttermilk, soda, beaten eggs, vanilla and marshmallow. Mix well and spoon into prepared baking pan. Marshmallows will tend to gather in one section; distribute throughout pan. Bake at 350° about 45 minutes until cake tests done in center. Spread with "Cola Topping" while cake is hot.

"COLA TOPPING"

½ cup butter or margarine
6 tablespoons Coca-Cola drink
3 tablespoons cocoa
1 (1 lb.) box powdered confectioner's sugar
1 teaspoon vanilla extract
1 cup chopped pecans

About 5 minutes before cake is done baking, combine butte, Coca-Cola and cocoa in medium saucepan. Heat over medium heat till mixture comes to boil. Stir in remaining ingredients; mix well and pour over warm cake while it's still in the pan. Topping will be very thin in texture, but will thicken as it cools on the cake. Cool completely before serving.
